Pumpkin soup can be good starter for a party. You also can have it as something light when you feel like having comfort food. It is a very easy and simple recipe. This is a good option when you are planning weight loss.

Ingredients:

ü 1 tbsp Olive oil

ü 4 Garlic cloves

ü 1 Cinnamon stick

ü 2 Bay leaves

ü 1/2 cup Finely chopped Onion

ü 2 cups Chopped Red pumpkin

ü 1/4 tsp Red chili flakes

ü 1/4 tsp Black pepper powder

ü 1 cup Water

ü 1/2 tsp Salt

 

Method:

v Heat up olive oil in a pan.

v Add garlic, cinnamon stick, bay leaves and fry for a few seconds.

v Add onion and fry for about 2-3 minutes.

v Add red pumpkin and mix well.

v Add red chili flakes, black pepper powder and mix well.

v Add water, salt and mix well.

v Cover and cook until pumpkin is cooked well.

v Remove bay leaves and transfer everything into a blender jar.

v Blend it into a smooth puree and pumpkin soup is already.

v You can add fresh cream while serving if you like.
