  • 2 medium-sized carrots, peeled and sliced

  • 1 yellow bell pepper, thinly sliced
  • 1 small eggplant, cubed
  • 1 red onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the sliced carrots, zucchinis, green beans, red bell pepper, yellow bell pepper, eggplant, and red onion.
  3. In a small bowl, mix the minced garlic, olive oil, dried oregano, ground cumin, salt, and pepper to create a flavorful marinade.
  4. Drizzle the marinade over the mixed vegetables in the large bowl. Toss everything together until the vegetables are evenly coated with the marinade.
  5. Spread the marinated vegetables on a baking sheet in a single layer.
  6. Roast the vegetables in the preheated oven for 25-30 minutes, or until they are tender and slightly caramelized. Be sure to stir the vegetables halfway through the roasting time for even cooking.
  7. Once the vegetables are done roasting, remove them from the oven and transfer them to a serving platter.
