Cheese Vada Pav

Cheese Vada Pav is a delicious twist on the classic Indian street food, Vada Pav. This unique recipe combines the crispy and spicy vada (potato fritter) with the creamy goodness of cheese. Here's how to make it:


For the Vada:

  • 4 large potatoes, boiled and mashed
  • 1 cup grated cheese (use your favorite cheese, like cheddar or mozzarella)
  • 2-3 green chilies, finely chopped
  • 1-inch piece of ginger, grated
  • 2 cloves of garlic, minced
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • A pinch of asafoetida (hing)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1 tablespoon chopped coriander leaves
  • Salt to taste
  • Oil for frying

For the Batter:

  • 1 cup chickpea flour (besan)
  • A pinch of baking soda
  • Salt to taste
  • Water

For assembling:

  • 4 pav (Indian bread rolls)
  • Butter for toasting


Prepare the Vada:

a. Heat some oil in a pan. Add mustard seeds, cumin seeds, and asafetida. Let them splutter.

b. Add green chilies and minced garlic, sauté for a minute.

c. Add grated ginger and sauté for another minute.

d. Add mashed potatoes, turmeric powder, red chili powder, garam masala, and salt. Mix well and cook for a few minutes until the spices are well incorporated.

e. Stir in the chopped coriander leaves.

f. Allow the potato mixture to cool.

g. Once cooled, divide the mixture into four equal portions.

h. Flatten each portion and stuff it with grated cheese. Shape it into a round patty.

Make the Batter:

a. In a bowl, mix chickpea flour, baking soda, and salt.

b. Gradually add water and whisk to make a smooth batter. The batter should be thick enough to coat the back of a spoon.

Heat oil in a deep frying pan.

1.      Dip each stuffed potato patty into the batter, ensuring it's evenly coated.

2.      Carefully lower the coated patty into the hot oil and fry until it turns golden brown and crispy. Repeat for all patties.

3.      Drain the excess oil by placing the fried vadas on paper towels.

Assemble the Cheese Vada Pav:

a. Slice the pav rolls in half.

b. Heat a little butter on a griddle and lightly toast the pav halves until they're golden brown.

Place a cheese-stuffed vada inside each toasted pav.

Serve your unique Cheese Vada Pav hot with your choice of chutneys, like tamarind or mint, and some fried green chilies or onions if you like it spicy.
